Erduoyan zhagao (ear-hole-like fried rice cakes)

Erduoyan zhagao is known as one of the "Three Tianjin delights", along with Mahua (fried dough twists) and Goubulibaozi (steamed stuffed bun). [Photo provided to chinadaily.com.cn]

With a history of more than 100 years, the erduoyan zhagao is made of rice flour. The flour is stuffed with small red beans and white granulated sugar, and then deep fried in sesame oil.

Liu Wanchun was its creator. The "zhagao" (rice cake) he made was named after the Hutong he lived in at the time, called Erduoyan.
